Chipotle Salad Bowl
One of my default dining-on-the-go places is Chipotle, with a simple menu and healthy options (not to mention my obsession with black beans) they’re an easy way to go. My salad usually contains: romaine, grilled bell peppers & onions, black beans, salsa, corn (with a lil’ extra) and guacamole on the side. Super filling and delish!
• 2 ripe plantains, peeled, halved and cut into strips.
• 225g cottage cheese
• 3 eggs, separated
• 1 tbsp dry breadcrumbs
• 1 tbsp sugar
• 4 tbsp olive oil
• 1 tsp ground cinnamon

Good morning, everyone! It’s Raw Wednesday, and this past week has been a bit crazy for me, but I have a couple of posts for today. Starting off with this simple mixed fruit bowl, these things are my go-to raw breakfast that I set up for work the night before.
The most novel tomato we have seen, this tomato is like a big bunch of cherry tomatoes all fused together: an amazing trait that had everyone here asking questions about the alien-looking, bumpy tomatoes. Also called “Traveler tomato” (“reise” is German for “travel” or “journey”) for the ability to tear it apart a piece at a time, with no need for a knife. Deconstructed Pasta!
I finally got a Julienne Peeler the other day so that it will be way easier, from here on out, to make noodles out of various vegetables! In this case, it happened to be zucchini which, I think, makes the best raw noodles. Next time I think I’ll blend the toppings in my processor and make a sauce to pour over the noodles, but I was feeling lazy and didn’t want to do any more dishes. Also, add in half an avocado for protein and healthy fats.
Ingredients:
1 Medium Zucchini, shredded into noodles
1 Large Tomato, chopped
2 Stalks Celery, chopped
2-3 Stems(?) Green Onion, chopped
1 tsp. Garlic Powder
Freshly ground pepper & sea salt to taste
Directions:
Toss all ingredients together in a bowl or container, and either eat right then or let it sit overnight in the refrigerator to let the flavors meld a bit more. Super easy, right?!
